Mangos and raspberries are two of my favorite fruits, so it seemed logical to combine the two in a smoothie. What a sweet surprise it was. This raspberry mango smoothie was one of the most refreshing smoothies ever. The sweetness of the mangos perfectly complemented the tartness of the raspberries.
Rather than blending everything together I decided to try for two-tone. This turned out to be inspired. As I spooned, the creamy mango layer gave way to the berry layer underneath.
Mangoes make the ideal smoothie ingredient. Their golden flesh adds creaminess to any smoothie.
And who doesn’t love a small berry or two. Whizzed together with some frozen banana and a dash of lime juice, it’s just like a berry sorbet. Combine the two and it’s not just heaven in a glass, but a healthy fix for your skin, loaded with vitamins A, C and E.
I used frozen fruit for these smoothies because it makes them thick and icy cold. But just remember if you are using fresh fruit, reduce the amount of liquid used. You can always add more.
1 c frozen raspberries
2 c coconut milk
1 frozen banana
Juice of 1 lime
1 c chopped frozen mango
½ inch piece of grated ginger
How to Make It
In a blender whizz together the frozen raspberries, 1 cup of coconut milk, half the frozen banana and the juice of one lime. Divide the raspberry lime smoothie between two tall glasses and set aside.
Rinse blender, then add the frozen mango, the remaining frozen banana, 1 cup of coconut milk and the grated ginger and blend until smooth.
Layer the mango banana smoothie onto the strawberry layer, gently spooning the mixture around the inside edge of the glass to minimise the two layers merging. (In spite of my best efforts, I still couldn’t get a clean horizontal line, but it certainly didn’t detract from the taste.)
This is a green, healthier version of the above smoothie, with the addition of spinach and chia seeds. Rather than try for two-tone, everything is just whizzed together in your blender. While it doesn’t result in the prettiest looking smoothie, nothing is lost to taste.
This very filling and nourishing smoothie could easily be a meal replacement.
1 c frozen mango
1 c frozen raspberries
1 c baby spinach leaves
½ c Greek yogurt
1 ½ cups almond milk
½ inch of grated ginger
1 tablespoon chia seeds
1 teaspoon honey
How to Make
To a high speed blender add frozen mango, raspberries, spinach leaves, Greek yogurt, almond milk, grated ginger, chia seeds and honey. Blend on high until smooth and creamy.
Pour into two glasses and serve with extra fruit.
